These lettuce wraps were a go-to lunch for me all summer long.
In fact, I’m not sure why I haven’t made these lately…they are SO GOOD and SO EASY!
I love that avocado is used in place of mayo. It’s a heart-healthy way to get a nice creamy coating to your chicken salad without the guilt! Wrapping these in lettuce instead of bread or tortillas makes them a fantastic grain-free alternative for lunch. The crunchiness of the fresh veggies and the zesty tang of the citrus and garlic will keep you coming back for more!
You don’t have to be Paleo to love these wraps and you can wow your gluten-free friends and family with this yummy lunch option.
I’m going to include a “recipe” but they really can be made with anything you have on-hand. If you like tons of onion…go for it! Can’t stand tomatoes…leave ’em out! Don’t have a lemon or lime…skip it!
Make these according to your own tastes and instinct. I’m sure you’ll find a combo that you love :)
- 4-6 romaine lettuce leaves
- 1 medium avocado
- ½ lemon or lime (for juice)
- 1 cup cooked chicken, shredded or cubed
- 1 roma tomato (or handful of grape tomatoes)
- 2 tablespoons chopped onion (red, green, white…whatever you like!)
- ¼ bell pepper, diced
- Salt, pepper and garlic powder to taste.
- Cut avocado in half, remove pit and scoop flesh into a small mixing bowl.
- Using a fork, mash the avocado until nearly smooth.
- Squeeze lemon or lime juice into bowl and mix to combine.
- Sprinkle salt, pepper and garlic powder (to taste) into avocado and mix completely.
- Stir in chicken, tomatoes, onion and bell pepper until everything is evenly coated.
- Scoop mixture into clean, dry romaine leaves and enjoy!

Made it for lunch today. Very nice. Love avocado so it was a good choice for a healthier lunch. I usde romaine lettuce, but net time I will use butter lettuce as it is more pliable. Thank you for this recipe. I am going to find out the fat and calorie count on this, unless someone already has it. I followed recipe exactly. Hi Michelle, Avocado tends to get brown after about a day in the fridge, so I’d make these when you plan to eat them, or at most maybe a day ahead and press plastic wrap right into the top of the mixture (touching it) so that no air can get to the avocado.

When I did weight watchers there were books and websites that made it easy to calculate points and such…I’d suggest you do something like that so you get accurate information since this recipe is so customizable and I don’t know the exact ingredients you used when making yours. I make something similar to these but use pita bread as a wrap. I’ve been trying to find something to use instead of the pita and using lettuce sounds like a great idea. I take the wraps when I’m playing golf. My question is, will they be a good alternative since I need something that’s going to be easy to eat while walking the course and something that doesn’t fall apart. Also I don’t eat my lunch until about 2-3 hours after starting the game – will these still be fresh or do you think they will wilt.

Hi Sue, I don’t think the lettuce will wilt waiting for you to eat these on the golf course. The only issue you might run into is the avocado turning a bit brown. Maybe keeping them in a tightly sealed container in a cooler would be your best bet. Good luck! Thanks for leaving a comment :)

Tried these yesterday and loved them! I loved the avocado in it! I make a wide variety of lettuce wraps for lunch and they do well in an insulated lunch sack. A small cold pack keeps things cool if it is a hot day. To keep things tidy, I wrap each in plastic wrap and unwrap it as I eat it. I use shrimp or imitation crab in some of my variations – so keeping them cold is important. Also for eating “IN MOTION,” slices of chicken lunch meat wrapped with the lettuce leaf around the salad, instead of – or as well as, chicken chunks in the salad, would help it hold together better, and sometimes I use a toothpick to pin them closed, if the lettuce is uncooperative! Chopping things small or slicing thinly will make it easier to wrap. Also, I need to leave the onion/garlic out since I am close to people all day, so I try other things to boost the flavor and texture. Apple, water chestnuts, or chopped dried fruit or nuts. Coarsely grated or chopped carrots, bell peppers, finely sliced or chopped celery, small chunks of hard cheese (grated or processed can get “slimy,”} chopped fresh broccoli or cauliflower, cold cooked beans… If it holds still it might be an option!

Karrie, it would really depend on what you put in them and how much. I’d suggest entering the ingredients you use into a calorie calculator like My Fitness Pal or LoseIt and that will give you the info you’re looking for :)

This recipe looks great! I was just wondering if you don’t use it all in one serving or make doubles, how long is the mixture good in the refrigerator? Or if you freeze, would it be okay to let it thaw in a cooler from morning until lunch time, then eat? Just trying to figure out the best way to begin making this for my lunches on the road! :)

I’d say it’s probably only good in the fridge for a day or so as the avocado will turn brown :( I’m not sure you’d have any success freezing it but I guess you could prepare the chicken and veggies, freeze them ahead of time and mix with the avocado later! Good luck on the road! :)
