This week I used some of my Maple Creek Farm veggies to make a mix that served multiple purposes…it was eaten with tortilla chips as a “chunky salsa”, wrapped into a whole wheat tortilla with cheese, sour cream and salsa and eaten as a burrito and then it was buried under cheese on top of tortilla chips and baked into nachos!
Here’s the “recipe”
Fresh sweet corn, boiled and then cut off the cob
Red bell pepper, chopped
Green bell pepper, chopped
Jalapeno pepper, finely chopped
Can of black beans, rinsed and drained
Juice of one lime
Salt, pepper and garlic powder to taste
You just mix it all up and then pop it into the fridge for all of the flavors to come together.
