Apple Cinnamon Breakfast Muffins

  • 1 cup all-purpose flour
  • ½ cup whole-wheat flour
  • 2 tsp. baking powder
  • ¼ tsp. salt
  • 1 tsp. ground cinnamon
  • ½ cup buttermilk
  • ½ cup honey
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • ¼ cup coconut oil, melted
  • 2 cups peeled and chopped Granny Smith apples (about 2 medium apples)
  1. Preheat oven to 400 degrees Fahrenheit and line muffin tin with muffin cups.
  2. In a medium bowl, whisk together flours, baking powder, salt, and cinnamon.
  3. In a large bowl, whisk together buttermilk, honey, eggs, vanilla, and oil.
  4. Stir in the dry ingredients into the wet ingredients and mix until just combined.
  5. Gently fold in the apples with a spatula.
  6. Divide the batter evenly in the muffin cups.
  7. Bake for 15 minutes, or until toothpick inserted in the center comes out clean.
  8. Transfer to wire rack to cool.
  9. Enjoy!
